This vessel is chosen by those who understand that the finest food begins with patience rather than haste.
“Some traditions preserve flavour not by resisting time, but by allowing it to breathe.”
For more than 160 years, the artisans of Yesan Onggi have shaped earthenware that serves not only as a container, but as an active participant in the slow transformation of food. This handmade 4-litre fermentation jar continues that lineage, preserving one of Korea's oldest traditions of natural fermentation through carefully refined craftsmanship passed down over four generations.
Unlike industrial storage vessels, an authentic Korean onggi is made from naturally matured clay and finished with a traditional mineral glaze prepared from wood ash and natural ingredients. The clay itself is aged for over five years before use, while the glaze is matured for more than six months. These processes are not simply matters of tradition; they contribute to the stability and character of the finished vessel.
The strength of an onggi lies in what cannot easily be seen. Its microscopic porous structure allows a subtle exchange of air while helping regulate moisture during fermentation. This gentle respiration has long made onggi the preferred vessel for preparing kimchi, doenjang, gochujang and soy sauce, supporting the slow microbial activity that develops depth of flavour over time.
Every jar is individually formed by hand, making slight variations in profile, surface texture and glaze an inherent part of its character. Rather than seeking mechanical uniformity, the artisan pursues balance—ensuring that the vessel sits securely, the lid fits naturally, and the proportions encourage stable fermentation throughout extended use.
This 4-litre size is well suited to smaller batches of traditional Korean fermented foods, while remaining practical for everyday kitchens. Its modest scale allows the vessel to retain the presence of traditional onggi without overwhelming contemporary living spaces.
The Yesan workshop maintains rigorous quality standards alongside traditional production methods. Each vessel is produced from natural materials and undergoes regular testing for safety, ensuring that centuries of craftsmanship continue to meet modern expectations.
Before first use, the jar should be rinsed thoroughly with clean water and allowed to dry completely. During long-term use, storing the vessel in a well-ventilated environment and avoiding sudden changes in temperature will help preserve its performance for many years.
